You can never go wrong with adding an egg to breakfast. Besides the high-quality protein, you’ll be getting plenty of lutein and zeaxanthin from the egg yolks. Recipe courtesy of Jackie Newgent, RDN.
INGREDIENTS

1 Tomatoes

1/4 tsp sea salt

1 Hard-Boiled Egg

1 shallot(s)

2 tbsp Organic Mayo

1/2 tsp Spicy Brown Mustard

1 tsp Fresh Dill
DIRECTIONS

Cut the tomato into 4 slices. Pat dry. Sprinkle with 1/8 teaspoon of the salt.

In a medium bowl, gently stir together the eggs, shallot, mayonnaise, mustard, dill, and remaining 1/8 teaspoon (or less) salt.

Top each tomato slice with the egg salad.

TIP: Hard boil eggs in advance.
