Espresso Mocha Pudding

This pudding gets its mocha richness from unsweetened cocoa powder and espresso. Its natural sweetness is from dates, which also boost the fiber in this unique pudding. Recipe + Image: Jackie Newgent, RDN.

INGREDIENTS

SERVES 4

  • 1 tbsp instant expresso powder
  • 2 tbsp Hot Water
  • 2 serving Large Whole Avocado
  • 1/3 cup Unsweetened Cocoa Powder
  • 10 pieces Delicious Pitted Dates
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt

DIRECTIONS

1 Stir the espresso powder into the hot water until it dissolves.
2 Place the avocado, cocoa powder, dates, vanilla extract, salt, and espresso mixture in a food processor. (Hint: The fresher and moister the dates, the better the results.) Cover and blend on high speed until smooth and creamy, at least 8 minutes to fully puree the date skins, scraping down sides of food processor bowl as necessary.
3 Transfer the pudding to small dessert dishes. Chill for at least 2 hours to allow flavors to blend, and serve.
