Farmers Market Mushroom and Herb Oatmeal

The paring of “meaty” mushrooms with aromatic fresh rosemary, chives and shallot make every drop of this savory vegan bowl memorable. Recipe and image courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 2

  • 3 cups low-sodium vegetable broth
  • 3/4 tsp fresh rosemary
  • 3/4 tsp sea salt
  • 1/2 tsp ground black pepper
  • 3/4 cup Steel Cut Oats (Dry)
  • 2 tsp olive oil
  • 1 shallot(s)
  • 8 oz sliced mushrooms
  • 1/4 cup fresh chives

DIRECTIONS

1 Bring the broth, rosemary, 1/2 teaspoon of the salt, and the pepper to a boil in a medium saucepan. Add the steel-cut oats and bring back to a boil. Reduce heat to medium-low and simmer uncovered, stirring occasionally, until fully cooked, about 20 minutes.
2 Meanwhile, heat the oil in a large skillet over medium-high. Add the shallot and mushrooms (such as oyster, shiitake, and baby bella) and sauté until mushrooms are fully wilted and browned, about 8 minutes. Add remaining 1/4 teaspoon of the salt.
3 Remove the oatmeal from the heat and stir in half of the mushroom mixture. Transfer to bowls, top with the remaining mushroom mixture and chives (or scallions), and serve.
