Preparing a frittata is easier than you think when you use this quick-cook method. Just add your egg mixture to a small pan, cover with a lid and cook for five minutes. That’s it!
INGREDIENTS

2 tsp extra-virgin olive oil

2 Free-Range Organic Eggs, Large Brown Grade A

1/8 tsp sea salt

8 Organic Grape Tomatoes

8 leaf fresh basil leaves

1 slice Sprouted 100% Whole Grain Bread
DIRECTIONS

Heat 1 teaspoon of the oil in a small (PFOA-free) nonstick skillet over medium heat.

Whisk together the eggs and salt in a measuring cup or bowl until well combined. Pour the egg mixture into the skillet and sprinkle with the tomatoes, cover and cook until the eggs are set, about 5 minutes.

With the help of a spatula, slide the frittata onto a plate and sprinkle with the basil. Serve with toast drizzled with the remaining 1 teaspoon of oil.
