Fish and Veggie Tacos

Fish tacos prepared in whole-grain tortillas and filled with grilled fish and veggies create a well-balanced, nutritious dish.

INGREDIENTS

SERVES 1

  • 2 Taco Size Whole Grain Tortillas
  • 3 oz Mahi-Mahi
  • 1/4 tomato(es)
  • 2 tbsp Basil, Fresh
  • 1/4 medium avocado
  • 1/4 medium red onion
  • 1/2 tbsp Coconut Oil

DIRECTIONS

1 Heat pan over medium high heat and add one tablespoon of oil.
2 Add mahi mahi and cook. Flake fish while cooking until in smaller pieces. Cook until fish is fully cooked. Add seasoning of choice - salt, pepper, taco seasoning, etc.
3 Place cooked fish into 2 tortillas, spreading evenly amongst both.
4 Top with tomato, basil, avocado and onion.
