Florentine Grilled Cheese Sandwich

INGREDIENTS

SERVES 4

  • 4 cups Baby Spinach Organic
  • 2 tsp 100% Lemon Juice
  • 1/4 tsp sea salt
  • 1 pinch Organic Ground Cayenne Red Pepper
  • 1 tbsp Butter, Unsalted
  • 6 oz Switzerland Gruyere Cheese
  • 8 whole-grain bread slice(s)
  • 4 Poached Egg

DIRECTIONS

1 Toss together the spinach, lemon juice, salt, and cayenne in a large bowl; set aside.
2 Heat a large (eco-friendly) nonstick skillet or sauté pan over medium heat. Thinly spread one side of each bread slice with the softened butter. In batches, place 4 slices buttered-side down in the pan and top each with 1 slice cheese, 1/2 packed cup of the fresh spinach mixture, and 1 poached egg. Top with the remaining spinach, sliced cheese, and bread slices, buttered-side up.
3 In batches, grill sandwiches until cheese melts and bread is well toasted, about 2 to 2 1/2 minutes per side, carefully turning sandwiches once during grilling. Cut in half diagonally, and serve.
4 {WITH POULTRY, FISH, OR MEAT} one serving: Place a thin, square-shaped, grilled 2-oz ground lean turkey patty with a pinch of sea salt in one of the sandwiches in place of the poached egg.
5 {WITH POULTRY, FISH, OR MEAT} full recipe: Place a thin, square-shaped, grilled 2-oz ground lean turkey patty with a pinch of sea salt into each of the sandwiches in place of the poached eggs.
6 Per serving {with poultry, fish, or meat}: 480 calories.
