Flourless Chocolate-Chip Dessert Pancakes With Smashed Raspberries

Pancakes aren’t just for breakfast: They also make a memorable dessert, especially when chock-full of chocolate chips. The batter consists of three main ingredients: banana, eggs and a pinch of sea salt. That’s right -- no flour is required!

INGREDIENTS

SERVES 2

  • 2/3 cup frozen raspberries
  • 1 medium banana
  • 2 Free Range Large Eggs
  • 1/8 tsp Sea Salt
  • 1/4 cup Baking Chunks Bittersweet Dark Chocolate 70% Cacao Packages
  • 2 sec Natural Non-Stick Cooking Spray, Coconut Oil

DIRECTIONS

1 Thaw raspberries, if frozen.
2 In a small bowl, smash raspberries. Set aside.
3 In a medium bowl, fully mash (fully-ripened) banana with fork.
4 Add eggs and salt and whisk with fork until well combined.
5 Stir in chocolate chips.
6 Spritz two large stick-resistant skillets with cooking spray and heat over medium-high.
7 Ladle the batter in the skillets, about 1/2 cup each; tilt and swirl skillets to make large thin pancakes.
8 Cook until browned on both sides, about 2 minutes total. (Alternatively, cook on griddle or prepare in batches in one skillet.)
9 Serve warm topped with smashed raspberries.
