Food Courting's Lime & Black Bean Brown Rice

A great twist on rice and beans - the lime really kicks up the flavor by adding a layer layer of freshness. You do not need a rice cooker - this can be prepared stove top as you would regularly prepare rice.

INGREDIENTS

SERVES 4

  • 2 lime
  • 1 tsp Green Chile Peppers
  • 1 cup Long Grain Brown Rice
  • 2 cups Chicken Broth, Low Sodium
  • 2 sprigs Cilantro, Fresh
  • 1 cup canned black beans

DIRECTIONS

1 Rice Cooker Method
2 Zest limes and roughly chop cilantro.
3 Add all ingredients into rice cooker. Stir to combine and cook for approximately 25 minutes (according to manufacturers instructions).
4 Stove Top Method
5 Zest limes and roughly chop cilantro.
6 Combine all ingredients in a small saucepan.
7 Bring to a boil and immediately cover and reduce the heat to low.
8 Cook 20 to 25 minutes until the rice is tender the liquid as been absorbed.
9 Serve immediately.
