A great twist on rice and beans - the lime really kicks up the flavor by adding a layer layer of freshness.
You do not need a rice cooker - this can be prepared stove top as you would regularly prepare rice.
INGREDIENTS

1 tsp Green Chile Peppers

1 cup Long Grain Brown Rice

2 cups Chicken Broth, Low Sodium

2 sprigs Cilantro, Fresh

1 cup canned black beans
DIRECTIONS

Rice Cooker Method

Zest limes and roughly chop cilantro.

Add all ingredients into rice cooker. Stir to combine and cook for approximately 25 minutes (according to manufacturers instructions).

Stove Top Method

Zest limes and roughly chop cilantro.

Combine all ingredients in a small saucepan.

Bring to a boil and immediately cover and reduce the heat to low.

Cook 20 to 25 minutes until the rice is tender the liquid as been absorbed.
