Frozen Lime and Avocado Tartlets

Even though avocado is mostly used in savory dishes, this buttery and mild tasting ingredient is perfectly suitable to use in many kinds of desserts.

INGREDIENTS

SERVES 6

  • 4 bar Cocunut Cream Pie
  • 1 medium avocado
  • 2 banana
  • 6 lime

DIRECTIONS

1 Cut each Larabar into 3 pieces each.
2 Put 2 pieces of Larabar in a silicone muffin mold, and press them with your fingers until they form a thin layer that covers all the muffin mold. Repeat with the rest of the Larabar pieces and molds.
3 Process the ripe avocado, ripe bananas, and lime juice in a blender or food processor, until smooth and creamy.
4 Fill each Larabar crust with this mixture (about 3 tablespoons), and sprinkle with some lime rind on top.
5 Freeze for 3 hours before serving.
6 Optional: Serve garnished with berries and a mint leaf. You can also try other Larabar flavors like Cashew Cookie, Pecan Pie or Lemon Bar
7 *If you freeze them for longer and they are very hard, transfer them to the fridge for one hour before serving.
