Garlic & Herb Dip Stuffed Peppers

There are mixed opinions about whether the allicin in garlic, which is its most important antibacterial component, stays alive through cooking. Some sources say it survives heat; others claim it’s rendered useless. Bell peppers can be used cooked, but when eaten raw they have the most amount of vitamin C left intact.

INGREDIENTS

SERVES 6

  • 1 cup Plain Greek Yogurt
  • 1 clove garlic
  • 3/4 tsp Dill Weed, Dried
  • 1/2 tsp maple syrup
  • 1/2 tsp Spices, onion powder
  • 1/4 tsp Salt, Table
  • 1/4 tsp Dried Sage
  • 1/8 tsp Black Pepper
  • 2 Whole Yellow Bell Pepper

DIRECTIONS

1 Mix all ingredients except bell peppers together in a bowl until well combined and refrigerate for one hour so flavors can marry
2 Spoon 2 tablespoons or more of dip into each pepper slice
3 *You can use Icelandic Skyr yogurt instead of Greek yogurt if preferred.
