Garlicky Italian White Bean, Spinach and Pasta Soup

This soup bursts with white beans and spinach, which contain heart-healthy folates. And if you’re trying to manage your weight, perhaps the best part of this scrumptious soup is that it’s satiating, thanks to the fiber and protein from the beans.

INGREDIENTS

SERVES 4

  • 1 tbsp Olive Oil, Extra Virgin
  • 4 garlic clove
  • 6 cups Low Sodium Vegetable Broth
  • 2 tbsp Lemon Juice
  • 1 1/4 tsp Sea Salt
  • 1 tsp Rosemary, fresh
  • 6 oz Farfalle
  • 15 oz Cannellini Beans
  • 10 oz Fresh Baby Spinach
  • 1/4 cup Shredded Parmesan

DIRECTIONS

1 Heat the oil in a large saucepan or stockpot over medium-high. Add the garlic and sauté until golden, about 1 minute.
2 Add the broth, lemon juice, salt and rosemary and bring to a boil over high. Stir in the farfalle (or other pasta) and beans and bring back to a boil.
3 Reduce heat to medium-low and simmer uncovered until the pasta is cooked through, about 10 minutes, stirring occasionally.
4 Stir in the spinach to wilt, about 1 minute. Adjust seasoning.
5 Ladle into bowls, sprinkle with the shredded (or shaved) parmesan, and serve. If desired, serve with crushed hot pepper flakes and/or lemon zest.
6 Notes:
7 While our recipe uses whole-grain farfalle, feel free to use any whole-grain noodle you want.
