Garlicky Zucchini Fries

Craving Italian food? Give these crispy, cheesy fries a go! Zucchini is naturally low in calories, at about 35 calories per squash, so these crispy fries are diet-friendly enough to become a regular part of your meal plan.



  • 1 medium zucchini
  • 1 tsp Sea Salt
  • 1/4 cup Unsweetened Almond Milk
  • 2 tbsp Corn Starch
  • 1/2 cup Whole Wheat Bread Crumbs
  • 1/2 oz Parmesan Cheese
  • 1 tsp Garlic Salt
  • 1/2 tsp Ground Black Pepper


1 Preheat the oven to 425 degrees Fahrenheit.
2 Slice the zucchini (or squash) into fries, roughly 3-4 inches long and ¾-inch thick.
3 Arrange the fries on a paper towel, place another layer of paper towel on top and blot away excess moisture.
4 Mix the almond milk (or skim milk) and cornstarch in a small mixing bowl.
5 Place the breadcrumbs, cheese, garlic salt and black pepper in a mixing bowl, stir to combine, then spread the mixture over a dinner plate.
6 Dunk each zucchini fry into the cornstarch mixture, then coat with the breading. Repeat the process again for a double-layer of breading.
7 Transfer the fries to a baking sheet lined with greased parchment paper.
8 Bake for 20 to 25 minutes until crispy, turning the fries once after 15 minutes.
9 Serve immediately, seasoned with additional black pepper to taste.
