Gingery Fruit Salad

When berries and peaches are seasonal in spring and summer, this is a must-make salad.

INGREDIENTS

SERVES 8

  • 4 peach
  • 2 cups raspberries
  • 2 cups Blackberries, Raw
  • 1 tbsp Coconut Nectar
  • 1 tbsp White Balsamic Vinegar
  • 1/2 tsp Fresh Ginger Root
  • 1 pinch sea salt
  • 1 tbsp fresh mint leaves

DIRECTIONS

1 Arrange peaches in a large serving bowl. Sprinkle with raspberries and blackberries.
2 Whisk together coconut nectar (or honey), vinegar, ginger and salt in a liquid measuring cup; drizzle over the fruit.
3 Sprinkle with mint, if desired.
