Glorious Tofu Buddha Bowl with Creamy Soy Dressing

Here’s a tip: Make this the centerpiece of a summer gathering with tons of different topping ingredients so that everyone can customize a bowl to their own taste. You’ll likely have leftover dressing to use as a veggie dip. From



  • 2 cups Cooked Brown Rice
  • 3 oz Savory Baked Tofu
  • 2 cups Arugula
  • 1 cup Cucumbers
  • 1 cup Purple Cabbage
  • 1 cup Raw Shredded Carrots
  • 1 cup Red pepper
  • 1 cup Organic Green Onions
  • 1/2 cup Fresh Dill
  • 1/2 cup Almonds, Sliced, Toasted
  • 1/2 cup Nutritional Yeast Seasoning
  • 1/3 cup Low Sodium Soy Sauce
  • 1/3 cup Raw, Unfiltered Apple Cider Vinegar
  • 1/3 cup Water
  • 2 tbsp Tahini
  • 2 tbsp Garlic
  • 1/2 cup Canola Oil 100% Natural


1 For the dressing: Using a blender or an immersion blender, combine the nutritional yeast, soy sauce, vinegar, water, tahini and garlic.
2 Add the oil in a slow stream until combined.
3 Store in a lidded jar and refrigerate. (It should last at least a week in the fridge, so use it over salads or as a dip throughout the week.)
4 To prepare bowl: Layer a bowl with ingredients, starting with the grains first and ending with the almonds, and then drizzle with the dressing.
