These delicious blondies feature a secret ingredient: chickpeas! The chickpeas are what make the blondies gluten-free and fudgy.You'll toss in almond butter for added protein.

INGREDIENTS

SERVES 6

  • 1 Chickpeas (garbanzo beans, bengal gram), mature seeds, canned, drained solids
  • 1/2 cup Almond Butter
  • 1 large whole egg
  • 7 , pitted date
  • 1/4 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 2 tsp Vanilla extract
  • 1/2 tsp Salt
  • 1/3 cup Baking Chips, Semi-Sweet Chocolate, Mini
  • 5 sec Cooking Spray, Olive Oil

DIRECTIONS

1 In a food processor, blend chickpeas, almond butter, egg, dates, baking soda, baking powder, vanilla and salt.
2 Fold in the chocolate chips.
3 Lightly coat a rectangular cake pan with cooking spray
4 Use a spatula to spread the mixture into a single layer.
5 Bake at 350 degrees Fahrenheit for 20 to 25 minutes
6 Cut into six squares. Sprinkle a pinch of sea salt on top of the squares.
