Gluten-Free Quinoa Chocolate Cupcakes

INGREDIENTS

SERVES 4

  • 3/4 cup Quinoa Flour
  • 1/2 cup Sugar
  • 2 tsp Cocoa Powder
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/3 cup Olive Oil
  • 2/3 cup Water
  • 1 Egg
  • 1 tsp Vanilla Essence
  • 1 pinch Powdered Sugar

DIRECTIONS

1 Preheat the oven to 350F.
2 Mix all the dry ingredients in a bowl, and all the liquid ones in another bowl. Then mix everything together with a whisk, until you have a smooth batter.
3 Place in cupcake paper cups, in a cupcake baking pan, and bake for 18-20 minutes.
4 Let cool, sprinkle with powdered sugar, and serve, or store in an air tight container.
