Flavorful and indulgent, this steak taco features grass-fed sirloin, ripe tomatoes and black beans. For a unique topping, add on some avocados and corn.
INGREDIENTS
SERVES 4

3/4 cup Corn, yellow, whole kernel, frozen, microwaved

1/2 cup Black Beans, rinsed and drained

1/4 cup Vine Ripened Tomatoes

2 tbsp cilantro
-
1 1/2 tbsp lime juice

1/2 tsp Sea Salt

4 6 Inch Corn Tortilla
-
1 1/3 cups Romaine Hearts
-
8 oz Grass fed sirloin tip steak

1/2 tsp Black Pepper, Ground

1/2 Avocado Haas
DIRECTIONS

Preheat a grill or grill pan over medium-high.

In a medium bowl, stir together the corn, beans, tomatoes, onion, cilantro, lime juice, and 1/4 teaspoon of the salt.

Season the flat iron (or sirloin) steak with the black pepper and remaining 1/4 teaspoon salt. Grill steak until at least medium-rare doneness, about 4 minutes per side. Let stand for 5 minutes. Thinly slice.

Lightly grill the tortillas before filling, if desired.

Top each tortilla with the Romaine, thinly sliced steak, avocado slices, and the corn mixture, and serve.
