INGREDIENTS

1 cup English Cucumber

1/2 cup 0% Greek Yogurt, Nonfat, Plain

1 tbsp lemon juice

2 tsp Extra Virgin Olive Oil

1 serving mint leaves

2 tsp fresh dill
-
1 clove garlic

1/4 tsp Sea Salt

1 cup Kefir
DIRECTIONS

Place the chopped cucumber in a single layer on a parchment paper–lined tray, cover, and freeze for at least 2 hours or overnight.

Add the frozen cucumber, yogurt, olive oil, lemon juice, mint, dill, garlic, and salt to a blender. Cover and blend on high speed until pureed.

Add the kefir. Cover and pulse once or twice to just combine.

Pour into chilled glasses, and serve. Alternatively, serve as a chilled soup.
