Greek Cucumber “Noodle” Salad

INGREDIENTS

SERVES 1

  • 1 tbsp extra-virgin olive oil
  • 1 tsp 100% Juice, Lemon
  • 1 garlic clove
  • 10 leaf fresh mint leaves
  • 1/2 cup plain low-fat Greek yogurt
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1 whole Long English Cucumber
  • 1 tbsp pine nuts

DIRECTIONS

1 In a small bowl, whisk together the olive oil, lemon juice, garlic, mint, yogurt, salt, and pepper; set aside.
2 Place the cucumber “noodles” in a clean kitchen towel and squeeze to absorb excess moisture. (Makes 10 oz.; 2 1/2 cups julienned “noodles” after squeezing.) Place the “noodles” in a medium bowl.
3 Add the yogurt mixture to the noodles and toss to evenly combine. If using, sprinkle with the pine nuts. Serve immediately.
