Grilled Chicken and Goat Cheese Salad

Crunchy vegetables and lean chicken breast make this salad a healthy choice for lunch.

INGREDIENTS

SERVES 1

  • 6 oz raw boneless, skinless chicken breast
  • 2 cups chopped romaine lettuce
  • 1/4 carrot(s)
  • 1/2 cucumber(s)
  • 1/4 medium red onion
  • 2 tbsp goat cheese
  • 2 tsp raspberry vinegar

DIRECTIONS

1 Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, about 8 to 10 minutes per side.
2 Slice chicken breast into 1-inch strips.
3 Mix all ingredients together in bowl.
4 Pour raspberry vinegar, to taste.
