Grilled Portobello Cheeseburgers

INGREDIENTS

SERVES 4

  • 4 Portabella Mushroom Caps
  • 1 tbsp extra-virgin olive oil
  • 1 garlic clove
  • 1 tsp fresh thyme
  • 1/2 tsp ground black pepper
  • 1/2 tsp sea salt
  • 1 Avocado (whole Fruit, No Peel Or Seed)
  • 1 1/2 tsp Lemon Juice
  • 4 slice Muenster Cheese
  • 4 Whole Grain Bun
  • 4 Red Onion Sliced
  • 2 cups Baby Arugula, Fresh

DIRECTIONS

1 Prepare an outdoor grill or grill pan. Remove stems and scrape out dark gills from the mushroom caps. Place mushrooms on a cutting board or sheet pan and dab both sides of the caps with the oil using your fingertips or a silicone pastry brush. Sprinkle the gill side with the garlic, thyme, pepper, and 1/4 teaspoon of the salt.
2 Mash the avocado, lemon juice, and remaining 1/4 teaspoon salt with a fork in a small bowl. Set aside.
3 Grill the mushroom caps, gill side up, over direct medium-high heat until lightly charred, about 4 to 5 minutes. Gently flip over and grill until mushrooms are tender, about 4 minutes. Transfer to the cutting board or sheet pan, top the gill side with the cheese, and let stand about 5 minutes to allow mushroom juices to settle and cheese to melt.
4 Spread the avocado mixture on the bottom portion of the buns. Top with the onion, cheesy mushrooms, and arugula. Add the bun tops and serve. (Note: Use whole grain sprouted or seeded buns, if possible.)
