Grilled Sweet-n-Spice Salmon With Rice

Wild Alaskan salmon is an eco-friendly fish that’s rich in heart-friendly omega-3s. Couple that with the following recipe and you’ve got a win-win!

INGREDIENTS

SERVES 1

  • 6 oz Wild Alaskan Pink Salmon
  • 1 tsp extra-virgin olive oil
  • 1 tsp honey
  • 1/4 tsp Ground Coriander
  • 1/4 tsp ground cumin
  • 1 pinch sea salt
  • 1 pinch ground black pepper
  • 1 cup cooked brown rice
  • 1/4 cup fresh cilantro

DIRECTIONS

1 Preheat a grill or grill pan. Lightly brush both sides of the salmon fillet with the oil. (TIP: Two boneless skinless chicken thighs can be substituted for the salmon fillet.)
2 Brush the flesh side with the honey and sprinkle with the coriander, cumin, salt and pepper. (TIP: Try chili powder in place of coriander for a change of taste.)
3 Grill the salmon, flesh side down, until charred, about 4 to 5 minutes. Flip the salmon and grill until medium doneness, about 4 to 5 minutes more.
4 Serve alongside or on top of rice and cilantro.
