Grilled Tilapia Tacos with Red Cabbage Slaw

Fish tacos are way more interesting than the traditional crumbled meat version. Here you’ll marinate tilapia filets with a simple chili-lime vinaigrette.

INGREDIENTS

SERVES 6

  • 1 1/2 cups raw red cabbage
  • 1/2 medium red onion
  • 1/4 cup cilantro
  • 3 1/2 tbsp lime juice
  • 1/4 tsp Sea Salt
  • 1/3 cup 2% M.F Greek Yogurt, Plain
  • 1/2 Hass Avocados
  • 4 Tilapia Filet
  • 1 tbsp Avocado Oil
  • 1 garlic clove
  • 1 tsp Chili Powder
  • 6 6 Inch Corn Tortilla

DIRECTIONS

1 Preheat a grill or grill pan over medium-high.
2 In a medium bowl, toss together the cabbage, red onion, cilantro, and 1 1/2 tablespoons of the lime juice, and the 1/8 teaspoon of the salt. Set aside.
3 In a food processor or blender, add the yogurt, avocado, 1 tablespoon of the lime juice, and 1/8 teaspoon of the salt. Cover and puree until smooth and creamy. Set aside.
4 In a small bowl or liquid measuring cup, whisk together the remaining 1 tablespoon lime juice, the avocado oil, chili powder, and remaining 1/8 teaspoon of the salt. Place fish into a rimmed dish or pan. Brush with the chili-lime vinaigrette and let stand to marinate, about 15 minutes.
5 Grill the fish until easily flaked with a fork, about 3 minutes per side. Transfer to a clean dish and pull apart into bite size pieces using two forks. Adjust seasoning.
6 Lightly grill the corn tortillas (or whole grain tortillas of choice) before filling, if desired.
7 Top each tortilla with the fish, desired amount of the red cabbage slaw, and avocado crema. Serve any remaining cabbage slaw on the side.
