Guacamole-Loaded Sweet Potato

Sweet potatoes are complex carbohydrates that pack a ton of vitamins and minerals, including beta-carotene, vitamin C and potassium. Yovana Mendoza, better known as Rawvana, shared a way to use these nutritious tubers as an amazingly filling base for healthy toppings in this guacamole-loaded sweet potato.

INGREDIENTS

SERVES 2

  • 1 sweetpotato , raw sweet potato
  • 1/2 cup romaine lettuce
  • 1 fruit without Avocados, raw, California
  • 2 medium whole tomato
  • 1/4 medium red onion
  • 1 tbsp fresh cilantro
  • 1/2 yields lime juice
  • 3 tbsp Tahini, Imported
  • 2 tbsp Lemon Juice

DIRECTIONS

1 Wash your sweet potatoes and pierce holes in them with a fork.
2 Preheat the oven to 400F and roast your sweet potatoes for 25 to 45 minutes (depending on thickness).
3 In a medium-sized bowl, mash together avocado, tomatoes, onion, cilantro, lime juice and sale to taste.
4 In a small bowl or mason jar, whisk together tahini and lemon juice.
5 Once sweet potatoes have cooled, place on a bed of lettuce.
6 Cut sweet potato open down the middle, stuff with guacamole and drizzle with tahini dressing.
