Healthy Paleo Bison Chili

You can substitute the bison with grass-fed beef, elk, or venison.

INGREDIENTS

SERVES 6

  • 2 lb Ground Bison
  • 2 tbsp Coconut Oil
  • 1 large Yellow Onion
  • 8 oz Fire Roasted Diced Green Chiles, Hot
  • 16 oz salsa
  • 4 tsp ground cumin
  • 4 tsp Chili Powder
  • 6 Large Stalk (11"-12" Long)
  • 4 cloves Garlic Clove
  • 2 Tomatoes

DIRECTIONS

1 Heat a heavy pot over medium-high heat and once hot, add coconut oil to the pan.
2 Next, add onions, celery and garlic. Saute for about 3 minutes - until onions are translucent.
3 Next, add ground bison, cumin, and chili powder and stir while this cooks for about 5 to 6 minutes, mixing the spices into the meat.
4 Finally, add salsa, green chiles, salt and tomatoes and let simmer for about 1 hour.
