Herb Scrambled Egg Crostini

In this recipe you'll use whole-grain toasts with a scrambled egg topping mixed with plenty of fragrant herbs -- it’s good for you!

INGREDIENTS

SERVES 1

  • 1 1/2 oz Whole Grain Baguette Bread
  • 2 Free Range Egg
  • 8 Fresh Basil Leaves
  • 1/2 tsp fresh rosemary
  • 1/8 tsp sea salt
  • 1 1/2 tsp grapeseed oil

DIRECTIONS

1 Lightly toast the baguette slices.
2 Meanwhile, in a medium bowl, whisk together the eggs, basil, rosemary (or thyme), and salt.
3 Heat the oil in a medium (PFOA-free) nonstick skillet over medium heat. Add the egg mixture and cook while stirring until softly scrambled, about 1 1/2 minutes.
4 Serve the eggs on the toasted baguette slices.
