Roasted carrots pair well with poultry or beef. When roasting whole carrots, look for carrots that are thinner and uniform in size. A sprinkle of goat cheese is optional and adds a creamy and sweet twist to traditional roasted carrots.

2 lb carrot(s)

1 1/2 tbsp extra-virgin olive oil

1/4 tsp Sea Salt

1 1/2 tsp ground cumin

1 tbsp Thyme, Fresh

2 garlic clove

2 tbsp Honey

1/2 cup goat cheese

Preheat oven to 425 degrees.

Cover a large sheet pan with tinfoil. Spray with fat free cooking spray. Arrange whole carrots in a single layer. Slice any really thick carrots in half length-wise.

Pour olive oil over carrots and roll carrots around until evenly coated. In a small bowl, combine salt, cumin and thyme and pour evenly over carrots. Roll carrots around with your hands until evenly seasoned.

Roast for 30 minutes. Remove carrots from the oven and flip them over.

Place back in the oven for another 10 minutes (carrots should be starting to caramelize).

Remove carrots from the oven and pour honey and garlic evenly over the carrots and roll the carrots around until evenly coated. Roast for an additional 8 minutes or so or until caramelized. Serve with goat cheese on top. Enjoy!
