DIRECTIONS

Microwave the chocolate chips for 20 seconds, stir, then microwave for another 20 seconds to melt.

Preheat oven to 350 degrees fahrenheit.

In a mixing bowl, combine the flour, arrowroot powder and salt.

In another mixing bowl, combine the oil, vanilla and 1 cup of honey.

Mix the dry ingredients into the wet ingredients and combine.

Drop with a teaspoon onto parchment-lined baking sheets and bake for 10 minutes or until brown around the edges.

Mix the remaining honey with the peppermint.

Melt the chocolate over a low heat and stir.

When the cookies have cooled, spread honey over their centers and smear chocolate over the top.

Place in the fridge or freezer to cool the chocolate if needed.
