Crackers topped with tomatoes and protein-rich mozzarella cheese served with green beans makes a light, nutritious lunch.

INGREDIENTS

SERVES 1

  • 16 string beans
  • 1 tomato(es)
  • 4 high-fiber crackers
  • 3 tbsp fresh part-skim mozzarella cheese
  • 1 tbsp extra-virgin olive oil

DIRECTIONS

1 Steam green beans until al dente and place at side of plate.
2 Place two tomato slices on each cracker.
3 Divide the mozzarella among the crackers.
4 Drizzle olive oil over crackers.
