Italian White Beans and Spinach

This easy, nutrient rich side dish utilizes many pantry items you already have at home and pairs beautifully with your favorite proteins like pork tenderloin, chicken, shrimp or filet mignon.

INGREDIENTS

SERVES 6

  • 1 tbsp extra-virgin olive oil
  • 30 oz Cannellini White Kidney Beans
  • 4 cups Spinach Fresh
  • 2 cloves Garlic Clove
  • 1 tsp fresh rosemary
  • 1/2 tsp Thyme, Fresh
  • 2 pinch red pepper flakes
  • 2 pinch sea salt
  • 2 dash ground black pepper
  • 1/4 cup Parmesan Cheese

DIRECTIONS

1 Heat a medium frying pan over medium heat. Add extra virgin olive oil.
2 Once oil is hot, add the next 6 ingredients (cannellini beans through fresh thyme) and sauté until spinach is wilted, making sure not to let the garlic burn.
3 Season to taste with salt and pepper. Add more red pepper flakes if desired. Top with Parmesan cheese. Enjoy!
