Jennifer Cassetta's Blended Broccoli Basil Pea Soup

As part of Jennifer's 30 Days of Vitamix Challenge, she came up with this deliciousness. This is super healthy, packed with fiber, all green, and can be an entire meal because of all the macro-nutrients. Simply said, there is plenty of protein from the peas and cashews, healthy carbohydrates from the broccoli and peas and a tad bit of healthy fat from the olive oil and cashews.

INGREDIENTS

SERVES 4

  • 2 tbsp Olive Oil
  • 4 garlic clove
  • 1 1/2 cups Peas, Raw
  • 4 cloves Garlic Clove
  • 3 cups Vegetable Broth (low Sodium)
  • 1 cup Drinking Water
  • 1 oz Roasted Cashews
  • 10 Fresh Basil Leaves
  • 1/8 tsp Salt and Pepper, to taste

DIRECTIONS

1 Heat a saucepan and add olive oil. Once heated add garlic and sauté until brown.
2 Add peas, broccoli and half of liquid to the garlic. Cover and let cook until the color pops and turns bright green.
3 Add the rest of the ingredients to a blender, including the cooked vegetables.
4 Adding the water – feel free to adjust amount based on your preference to soup thickness.
5 Garnish with basil or cashews.
6 Enjoy!
