Jess's Healthier Seven-Layer Bean Dip

A party favorite, and your guests won't have a clue it's on the healthier side.

INGREDIENTS

SERVES 12

  • 6 Whole Wheat Tortilla
  • 2 medium Avocado
  • 2 tbsp Lime Juice Raw
  • 1/4 cup Onions
  • 1 clove Garlic
  • 3 cups Lettuce, Romaine
  • 16 oz Fat-Free Refried Beans
  • 1 cup Non Fat Sour Cream
  • 1/2 cup Onions, Green
  • 2 Tomatoes
  • 3 oz Black Olives, Chopped
  • 1 cup Low Fat Sharp Cheddar Cheese

DIRECTIONS

1 Bake tortilla chips
2 Preheat oven to 350
3 Slice tortillas into triangles (6 each)
4 Place triangles on a baking sheet sprayed with nonstick cooking spray. Spray the tortillas with a light mist of nonstick cooking spray and a pinch of salt. Bake for 5 minutes or until crisp. Remove from the oven and immediately squeeze the juice of half a lime over the chips.
5 PREP:
6 Chop onions
7 Mince garlic
8 Shred romaine lettuce
9 Green onions chopped
10 Dice tomatoes
11 Chop black olives
12 Shred Cheddar Cheese
13 INSTRUCTIONS:
14 Make Guacamole:
15 Mix mashed avocado with lime juice, onion, garlic and salt (to taste)
16 Dip:
17 Start by layering a dish with shredded romaine.
18 Next layer with refried beans.
19 Next layer guacamole
20 Next layer sour cream
21 Next layer green onions
22 Next layer diced tomatoes
23 Next layer black olives
24 Final layer shredded cheese
25 SERVE:
26 Enjoy with the zesty baked tortilla chips!
