Caesar salad dressing is usually made with raw egg, which is what helps give the dressing its creamy consistency, explains Sarah Gim of @thedelicious. "I love a soft, velvety egg yolk as much as the next person, but fully raw is a little too, well, raw for my taste," she says. Her solution? Top the vinaigrette-tossed kale with a poached egg, mix the yolk in, and you have a creamy Caesar-like dressing with significantly fewer calories.
INGREDIENTS

3 cups Tuscan Kale

3 cups romaine lettuce

1/4 cup Vinaigrette

2 tbsp grated parmesan cheese

2 Large Grade AA Eggs

1 pinch Sea Salt
-
1 pinch Pepper, Ground Black

2 slice wheat bread

1 clove garlic
DIRECTIONS

Toss chopped Tuscan kale and romaine lettuce with anchovy vinaigrette. Taste a leaf and add more vinaigrette if necessary.

Toss with nutritional yeast or Parmesan cheese.

Divide salad into bowls.

Grill bread and rub with garlic.

Add a poached egg on top of the greens, and grilled bread to the side of the bowl.

Season with flaky sea salt and fresh cracked black pepper.
