Kale Caesar Salad with Poached Eggs and Grilled Bread

Caesar salad dressing is usually made with raw egg, which is what helps give the dressing its creamy consistency, explains Sarah Gim of @thedelicious. "I love a soft, velvety egg yolk as much as the next person, but fully raw is a little too, well, raw for my taste," she says. Her solution? Top the vinaigrette-tossed kale with a poached egg, mix the yolk in, and you have a creamy Caesar-like dressing with significantly fewer calories.

INGREDIENTS

SERVES 2

  • 3 cups Tuscan Kale
  • 3 cups romaine lettuce
  • 1/4 cup Vinaigrette
  • 2 tbsp grated parmesan cheese
  • 2 Large Grade AA Eggs
  • 1 pinch Sea Salt
  • 1 pinch Pepper, Ground Black
  • 2 slice wheat bread
  • 1 clove garlic

DIRECTIONS

1 Toss chopped Tuscan kale and romaine lettuce with anchovy vinaigrette. Taste a leaf and add more vinaigrette if necessary.
2 Toss with nutritional yeast or Parmesan cheese.
3 Divide salad into bowls.
4 Grill bread and rub with garlic.
5 Add a poached egg on top of the greens, and grilled bread to the side of the bowl.
6 Season with flaky sea salt and fresh cracked black pepper.
