Kale and Chicken Caesar Salad with Quinoa and Pecans

Seamus Mullen, chef and author packs a ton of protein in this salad thanks to roasted chicken along with a soft-boiled egg and tricolor quinoa for a plant-based protein. Pecans add a much-needed crunch and makes this salad feel luxe, but Mullen warns to make sure to measure your portion and treat them like a garnish to avoid overeating.

INGREDIENTS

SERVES 4

  • 1 cup Tricolor Quinoa, Organic
  • 1 cup rotisserie chicken breast
  • 2 cups Kales, Mixed Baby
  • 1 cup avocado
  • 1 medium apple
  • 1/4 cup raw pecans
  • 1/4 tsp Sea Salt
  • 3/5 g Pepper, Ground Black
  • 2 tbsp caesar dressing
  • 1 large hard-boiled egg

DIRECTIONS

1 Mix ingredients in large bowl.
2 Toss with Ceasar dressing, adding salt and pepper to taste.
