This fun recipe features kale leaves stuffed with edamame and miso spread. Kale is an excellent source of fiber, while edamame simply bursts with immunity-boosting copper and bone-strengthening manganese. Enjoy these kale pockets as hors d’oeuvres or as a grab-and-go snack.
INGREDIENTS

12 oz Edamame, Shelled Soybeans

1 clove garlic

2 tsp Premium White Miso Paste

1/4 cup Olive Oil, Extra Virgin

1 fruit lime
-
1/4 cup Parsley, Raw Fresh

4 cups Kale
DIRECTIONS

Snap the stems off the kale.

Steam the kale leaves for 3-5 minutes, until they turn bright and soft.

Place the edamame, garlic, miso, oil, and parsley into a food processor or blender and add the juice from one of the limes.

Blend the edamame mixture until smooth. Add more lime if desired.

Take each leaf of kale and place a spoonful of the edamame spread in the center.

Fold each side of the leaf in like an envelope creating a square.

Repeat with each leaf.

Turn the pocket over so the open side is on the cutting board and slice diagonally through each pocket to serve.
