Kale Salad with Pomegranates and Honey Yogurt Dressing

Top this easy and nutritious salad with your favorite lean protein like seared scallops, grilled shrimp or chicken for a satisfying meal that will help to keep your blood sugar levels stable. For a full meal, simply double the portion sizes.

INGREDIENTS

SERVES 4

  • 1/2 whole yiel LEMON Juice, Fresh Squeezed
  • 1/2 tsp whole grain mustard
  • 3 tbsp Roasted Walnut Oil
  • 2 tbsp 2% Greek Yogurt - Plain
  • 1 1/2 tbsp Honey
  • 1/2 shallot(s)
  • 1/4 tsp Sea Salt, Coarse, Mediterranean
  • 3 1/2 cups Baby Kale
  • 1 pear
  • 1/4 cup pomegranate seeds

DIRECTIONS

1 In a small bowl, whisk together juice from half of a lemon and whole grain mustard. Slowly whisk in the toasted walnut oil. Whisk in remaining ingredients.
2 Toss baby kale with dressing and plate.
3 Top each salad with sliced pears and pomegranate seeds. Enjoy!
