Bok Choy and Tofu Stir Fry

A flavorful and nutritious dish.

INGREDIENTS

SERVES 1

  • 1 tsp Natural Peanut Butter- Chunky
  • 1 tsp Rice Vinegar
  • 1/4 tsp Soy Sauce
  • 1 tbsp Water
  • 1/4 tsp Fresh Garlic
  • 1/4 tsp Red Pepper Flakes
  • 1 tsp Safflower Oil
  • 1/2 cup Bok Choy
  • 4 oz Extra Firm Tofu
  • 1/4 cup Red Bell Pepper, Raw
  • 1/4 cup Mushrooms

DIRECTIONS

1 Prep:
2 Garlic should be grated
3 Bok Choy should be trimmed and thinly sliced
4 Tofu cut into 1/2inch cubes
5 Red bell pepper - thinly sliced
6 Mushrooms sliced
7 Directions:
8 Combine the peanut butter, rice vinegar, soy sauce, water, garlic, and red pepper flakes. Stir to combine and set aside.
9 Heat the oil in a nonstick skillet over medium heat. Separate the bok choy ribs from the leaves. Place the tofu in a single layer in the skillet and add the bok choy ribs.
10 Cook 2 to 3 minutes, then flip the tofu and cook 3 more minutes, stirring to brown all sides of the tofu.
11 Add the reserved bok choy leaves, bell pepper, mushrooms, and scallion.
12 Stir in the peanut butter mixture and cook, stirring, 3 more minutes, or until the peppers are slightly softened.
13 Serve and Enjoy!
