Roasted Chicken Lettuce Wrap

This recipe is Gluten free. You can use pre-made, store bought chicken breast, or bake/roast your own - just no skin please!

INGREDIENTS

SERVES 1

  • 4 oz Chicken Breast Roasted
  • 1 cup Cucumber
  • 1/2 cup Red Peppers
  • 1/2 cup Bell Peppers, Yellow
  • 1 oz Mozzarella Cheese, Shredded
  • 1/2 tbsp Dijon Mustard
  • 2 , Romaine Lettuce Leaves

DIRECTIONS

1 You can either buy pre-roasted chicken, or bake/roast your own chicken breast.

3 To quickly bake/roast a chicken breast:
4 Heat oven to 375
5 Spray baking sheet with cooking spray
6 Season chicken breast with salt and pepper
7 Bake for 30 minutes until chicken is cooked through and juices run clear.

9 Prep:
10 Peel and chop cucumber.
11 Chop red and yellow peppers into thin strips
12 Cut chicken breast into strips that will fit nicely into the lettuce leaves.
13 Assemble:
14 Spread mustard on lettuce leaves. Evenly distribute the chicken between the lettuce leaves.
15 Evenly distribute the chopped vegetables and place on chicken and top with cheese.
16 Roll up lettuce to make a “wrap”.
17 Enjoy!
