Roasted Chicken Lettuce Wrap

This recipe is gluten free. You can use pre-made, store bought chicken breast, or bake/roast your own - just no skin please!



  • 4 oz Chicken Breast Roasted
  • 1 cup Cucumber
  • 1/2 cup Red Peppers
  • 1/2 cup Bell Peppers, Yellow
  • 1 oz Mozzarella Cheese, Shredded
  • 1/2 tbsp Dijon Mustard
  • 2 , Romaine Lettuce Leaves


1 To quickly bake/roast a chicken breast: Heat oven to 375 and spray baking sheet with cooking spray then season chicken breast with salt and pepper.
2 Bake for 30 minutes until chicken is cooked through and juices run clear.
3 Peel and chop cucumber.
4 Chop red and yellow peppers into thin strips
5 Cut chicken breast into strips that will fit nicely into the lettuce leaves.
6 To assemble, spread mustard on lettuce leaves. Evenly distribute the chicken between the lettuce leaves. Evenly distribute the chopped vegetables and place on chicken and top with cheese.
7 Roll up lettuce to make a “wrap.”
