Coconut milk and avocado might not seem like an automatic fit, but with the help of chia and some honey, this really does become the healthy dessert bowl you’ll find yourself dipping back into again and again.
INGREDIENTS

1 cup Unsweetened Coconut Milk

1/2 fruit without skin and seed Avocados, raw, California

1/3 cup Lime juice, canned or bottled, unsweetened

1 tbsp Honey

2 tbsp Coconut Butter

1 dash Salt, table

1/4 cup chia seeds

1 1/4 cups Honey Maid Graham Cracker Crumbs

5 tbsp Unsalted Butter
-
1 pinch Lime Zest
DIRECTIONS

Combine coconut milk, avocado, lime juice, honey, coconut butter, and salt in a blender or food processor until smooth. Whisk in chia seeds, then reserve in the fridge for about 3 hours, or overnight.

Preheat oven to 350 F. Combine graham cracker crumbs and melted butter in a bowl and press into a pie plate. Bake for 5-10 minutes, then crumble evenly over the bottom of 4 bowls, reserving 4 tbsp for garnish.

Spoon pudding over graham crackers, garnish with remaining graham cracker crumbs and lime zest and serve.
