Kimchi and Grilled Chicken Lettuce Cups

Here we use hormone and antibiotic-free grilled chicken breasts that are marinated with amino-rich, low-glycemic Coconut Secret Teriyaki Sauce. Simply mix the grilled chicken with chopped cucumbers, shredded carrots and the kimchi, and then scoop the mixture into Bibb lettuce cups.



  • 3 filet Chicken Breasts
  • 3 leaf Bibb Lettuce
  • 1/2 cup Long English Cucumbers
  • 1/2 cup Carrots
  • 1/2 cup Purple Cabbage Chopped
  • 1/2 cup Kimchi
  • 1 tbsp Black Roasted Sesame Seed
  • 1/2 cup Coconut Aminos, Teriyaki Sauce


1 Marinate chicken breasts in teriyaki sauce overnight.
2 Grill marinated chicken away from direct flame, brushing the meat with teriyaki sauce every two minutes until it is well cooked.
3 When chicken has cooled, shred by hand into fine pieces.
4 Drizzle 2 tablespoons of additional sauce over the meat.
5 Toss cucumber, carrots, cabbage and kimchi in a large bowl, gradually adding in chicken.
6 Scoop mixture evenly into lettuce pieces. Garnish with sesame seeds.
7 Serve immediately.
