Canned tomatoes have higher levels of cancer-fighting lycopene than fresh tomatoes. Brighten up the sauce with fresh cilantro, which can help reduce “bad” cholesterol, and lime juice, which can help improve digestion. This sauce tastes great with multigrain tortilla chips.

INGREDIENTS

SERVES 16

  • 28 oz Organic Crushed Tomatoes
  • 3/4 cup Kimchi
  • 1/4 cup fresh cilantro
  • 1 medium red onion
  • 1 tsp Lime Juice
  • 1/2 tsp Sea Salt
  • 1/2 tsp Stevia

DIRECTIONS

1 Add tomatoes, kimchi and cilantro into blender and pulse briefly, just enough to coarsely chop ingredients.
2 Mix in diced onion, lime juice salt and stevia. Stir well with a rubber spatula.
3 Serve chilled or at room temperature with your favorite tortilla chips.
