Leafy Rotisserie Chicken Salad with Creamy Tarragon Dressing

INGREDIENTS

SERVES 4

  • 15 oz canned white beans
  • 1/3 cup White Balsamic Vinegar
  • 1 tbsp extra-virgin olive oil
  • 2 garlic clove
  • 2 tbsp tarragon, fresh
  • 6 cups Mesclun Salad Mix
  • 1/2 medium red onion
  • 1 1/3 cups Chicken Breast, Cooked
  • 12 Grapes (Red or Green)
  • 1 cup English Cucumber
  • 3 tbsp pine nuts
  • 3/4 tsp ground black pepper

DIRECTIONS

1 Add 1/2 cup of the beans, the vinegar, oil, garlic, and 1 Tbsp. of the tarragon to a blender. Cover and puree.
2 Arrange greens on a large platter. Top with remaining beans, onion, chicken, grapes, cucumber, nuts, pepper, and remaining 1 Tbsp. tarragon.
3 Serve the dressing on the side.
