Lemon and Caper Grilled Chicken

Lemon and capers liven up this chicken for a tasty protein-filled main course.

INGREDIENTS

SERVES 1

  • 6 oz raw boneless, skinless chicken breast
  • 1/4 lemon
  • 1 tsp capers
  • 2 fresh parsley sprig

DIRECTIONS

1 Using cooking spray, cook chicken in a non-stick pan over medium heat. Cook until browned on the outside and cooked throughout, 8 to 10 minutes per side.
2 Add the lemon juice and capers to the pan, swirl around to heat, and pour over the chicken.
3 Top with parsley.
