Lemongrass Beet and Feta Mason Jar Salad

Lemongrass has assorted B vitamins and is antimicrobial. Sheep’s milk cheeses tend to be tangy, and the subtle citrus of lemongrass brightens the cheese and brings out its sharpness.

INGREDIENTS

SERVES 1

  • 3/4 cup raw beets
  • 1/2 cup Feta Cheese
  • 1 cup Arugula
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 sticks Lemongrass
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

DIRECTIONS

1 Directions:
2 In a steamer pan or in a pot with half an inch of water, steam the beets with lemongrass for 20 minutes or until cooked through.
3 Add salt and pepper to the beets and let cool.
4 Layer the beets in a Mason jar. Add cheese, and drizzle with oil and vinegar.
5 Pack arugula on top and seal until ready to eat.
