Lentil and Tomato Spinach Salad

Cooked lentils dress up this simple spinach salad and add protein.

INGREDIENTS

SERVES 1

  • 2 cups baby spinach
  • 1/2 cup cherry tomatoes
  • 1/3 medium red onion
  • 1/2 cup cooked lentils
  • 2 tsp extra-virgin olive oil
  • 1 tsp balsamic vinegar
  • 1 dash salt and pepper

DIRECTIONS

1 Place spinach in bowl.
2 Add remaining ingredients and toss.
