Lentil Walnut Soup

Lentil Walnut Soup

Lentil soup is hearty and filling thanks to the protein and fiber in lentils. The accompanying salad can be made with any preferred chopped vegetables.

INGREDIENTS

SERVES 1

  • 1 cup canned low-sodium lentil soup
  • 1 cup mixed baby greens
  • 1 celery stalk(s)
  • 1/2 carrot(s)
  • 1/2 tomato(es)
  • 5 walnut halves
  • 1 tsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar

DIRECTIONS

1 Prepare soup according to package instructions and top with nuts.
2 Toss salad with oil and vinegar.
