Lightened Up Chicken and Fig Sandwich

Swap out red meat and high fat condiments for lean chicken and fresh spinach, cheese and figs.

INGREDIENTS

SERVES 1

  • 1 Whole Grain Baguette (Side Portion)
  • 1/3 cup Baby Spinach Organic
  • 6 oz Organic Roasted Chicken Breast
  • 1 medium sized Fig
  • 1/2 oz Fresh Chevre
  • 2 tsp Balsamic Reduction

DIRECTIONS

1 Hollow out the bread on each side to remove a chunk of excess carbs.
2 Lay down some spinach, the roasted chicken breast with the skin, sliced ripe figs, and chevre. Finish with a drizzle of the Balsamic reduction.
3 * RECIPE IS ACTUALLY ~80 CALORIES LESS THAN SHOWN SINCE EXCESS BREAD IS "PINCHED OUT" OF LOAF.
