This mac and cheese strays a little bit from a traditional flavor of the boxed version, but the texture and creaminess will have you satisfied in the exact same way. Recipe and Image: Sherrie Castellano.

INGREDIENTS

SERVES 4

  • 3 1/2 cups Pasta Shells
  • 1/3 cup Peas, Raw
  • 1/2 cup Raw Cashews
  • 2/3 cup Almond Milk, Unsweetened
  • 1/2 tsp sea salt
  • 1/2 tsp Pepper, Black
  • 1/4 tsp Garlic, Granulated
  • 1 tbsp Nutritional Yeast
  • 2 tbsp fresh chives

DIRECTIONS

1 Boil the pasta according to package instructions. In the last minute of cooking, toss in the peas. Drain and then return the pasta to the pan.
2 While the pasta cooks, prepare the cheese sauce. In a blender, whiz together the cashews, almond milk, salt, pepper, garlic and nutritional yeast until smooth. Pour the sauce over the pasta and cook for one minute on low. Serve with a sprinkle of chives (optional).
