Make-Ahead Steak Appetizer Platter

Everyone needs at least one go-to appetizer recipe in their repertoire, and this one is so easy and perfect for impressing guests. Firstly, the steak can be made a day ahead. Secondly, the rest is basic assembly of good quality store-bought ingredients like green olives, pistachios, almonds, dried fruit, and dipping sauces.

INGREDIENTS

SERVES 6

  • 1 lb Beef, loin, top loin steak, boneless, lip off, separable lean and fat, trimmed to 0" fat, select, raw
  • 2 tbsp Chives, raw
  • 1/4 cup almonds
  • 1/4 cup raw pistachios
  • 1/4 cup Apricots, dried, sulfured, stewed, without added sugar
  • 4 serving Assorted Olives
  • 8 oz Whole Grain Baguette
  • 1 cup Chimichurri
  • 4 medium whole tomato

DIRECTIONS

1 Salt the steak on all sides and let air dry in the refrigerator for at least 3 hours, or overnight.
2 Bring up to room temperature for at least 30 minutes.
3 Preheat oven to 300 F for at least 15 minutes.
4 Roast in oven for 15 minutes, rotate 180 degrees, and roast for a final 10 minutes, or until an instant-read thermometer reads 125 F internal temperature.
5 Remove from oven and let cool for at least 15 minutes.
6 Trim away excess fat and slice against the grain on the bias (diagonal).
7 Can be made a day ahead. When ready to serve, arrange steak on a platter, top with chives, and surround with your choice of optional finger foods and sauces.
