Mermaid Toast

Hop on the rainbow-foods bandwagon with this gorgeous vegan toast. Mix colorful superfoods like spirulina, matcha, turmeric and Blue Majik into the vegan cream cheese of your choice — we use almond-milk cream cheese — then decorate your toast at will. Finish off with vegan sprinkles, gold leaf and edible flowers if you're feeling really fancy.

INGREDIENTS

SERVES 4

  • 4 slice whole-wheat bread
  • 1 cup Vegan Cream Cheese
  • 1/2 level teaspoon Organic Spirulina Powder
  • 1/2 tsp Powdered Green Matcha Tea
  • 1/2 tsp Turmeric

DIRECTIONS

1 Toast the bread and spread a tablespoon of almond-milk cream cheese (or the vegan cream cheese of your choice) on each slice.
2 Divide the remaining almond-milk cream cheese into four bowls.
3 Mix 1/2 teaspoon of powdered superfood into each bowl of cream cheese, adding more until you achieve the desired color.
4 Swirl the colored cream cheeses onto your toast with a butter knife or offset spatula.
5 Top with sprinkles and/or gold leaf. Edible flowers are also fun!
